WHAT IS THE MEANING OF GLUTEN FREE FOOD?

A gluten-free diet excludes any foods that contain gluten, which is a protein found in wheat and several other grains. It means eating only whole foods that don't contain gluten, such as fruits, vegetables, meat and eggs, as well as processed gluten-free foods like gluten-free bread or pasta.


CELIAC DISEASES :

It is a condition triggered by hypersensitivity to a protein called gluten that is found in grains like wheat, barley and rye (not mustard seeds). Eating food with gluten causes an immune reaction in the small intestines that can damage its lining and lower the absorption of essential nutrients leading to malabsorption. The disease occurs globally, has no socio-economic boundaries  and can occur at any age.

SYMPTOMS:
May vary from typical gastro-intestinal disturbances, growth problems, stunting, anemia fatigue, weakness, weight loss to atypical ones.

DIAGNOSIS:
Is done using serological markers (blood tests), endoscopy and biopsy. 

Celiac Disease is a permanent condition and requires life long strict restriction to gluten along with nutritional supplements to correct deficiencies.

There are also some foods that a patient should not eat :

  1. Herbal Teas, Flavored Coffee. Check source of caramel in cola drinks.
  2. All breads made with wheat/maida flour, bread crumbs, wafers, doughnuts, dhokla commercial pakoras, bread toast, pizzas, hot dogs, burgers etc.
  3. All cereals containing wheat, barley etc or malt flavors and malt syrup.
  4. Malted milk,some chocolate milk drinks, some commercial Ice creams, some flavored yogurt containing glutens.
  5. Toffees, cake decorations, icing sugar, Halwai Sweets (Unless Verified).
